Indulge in a decadent chocolate ricotta cake with a luscious pudding topping for a simple yet irresistible dessert.
Ingredients:
  • 535g packet rich chocolate cake (see notes)
  • 57.50 gm vegetable oil
  • 375g tub smooth ricotta
  • 107.50 gm caster sugar
  • 8.80 gm vanilla extract
  • 100g packet chocolate dessert mix
  • 128.75 gm milk
  • 300ml thickened cream
  • Dutch-processed cocoa, for dusting
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 16cm x 21cm x 5cm deep baking dish.
  • In a bowl, vigorously blend together cake mix, 2 eggs, 3/4 cup water, and oil until fully combined. Transfer the mixture into the prepared dish.
  • In a separate bowl, whisk together the ricotta, remaining eggs, sugar, and vanilla. Spoon the mixture over the center of the cake batter, leaving a 1cm border. Bake for 1 to 1 hour 10 minutes until the cake is just firm to the touch. Let it cool for 2 hours before serving.
  • Mix chocolate dessert mix with milk and cream briefly until just starting to thicken. Quickly spread the chocolate mixture over the cake and create a swirling pattern. Sprinkle with cocoa powder and serve.
