Indulge in chocolate soymilk pancakes topped with fresh berries and creamy yogurt for a delightful breakfast.
Ingredients:
  • 3/4 cup light chocolate soymilk
  • 1/4 cup fat-free egg product
  • 1 tablespoon canola or vegetable oil
  • 3/4 cup Gold Medal™ all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons unsweetened baking cocoa
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 cup sliced fresh strawberries
  • Sliced banana, if desired
  • Yoplait® Original French vanilla yogurt, if desired
Instructions:
  • In a medium bowl, whisk together soymilk, egg product, and oil until smooth. Then fold in all remaining ingredients except strawberries, banana, and yogurt.
  • Prepare the griddle or skillet with a light coating of cooking spray and heat to 375°F. Ladle slightly less than 1/4 cup of batter for each pancake onto the hot surface.
  • Pancakes should be cooked until they puff up and appear dry around the edges. Flip and cook until both sides turn a beautiful golden brown. Serve with a delightful combination of fresh strawberries, bananas, and creamy yogurt.
