Chocolate peppermint slice

Decadent chocolate peppermint bars that are irresistible - a test of self-control!
Ingredients:
  • 2 x 200g packets Mint Slice biscuits
  • 75g butter, melted
  • 300.00 gm icing sugar mixture
  • 50g copha
  • 64.38 gm milk
  • 1/2 tsp peppermint essence
  • 180g dark chocolate, chopped
  • 25g butter
  • 180g white chocolate, chopped
  • Green food colouring
Instructions:
  • Prepare your 18cm x 28cm slice pan by greasing it and lining the base and sides with baking paper, making sure to leave a 3cm overhang on all sides.
  • Pulse biscuits until finely chopped in a food processor. Add butter and pulse until mixture comes together. Press mixture onto the base of the pan. Cover and chill in the refrigerator for 30 minutes.
  • Prepare filling: Combine icing sugar, copha, and milk in a microwave-safe bowl. Microwave on medium (50%) power for 2 to 3 minutes, making sure to stir every minute with a metal spoon until the mixture is smooth and the sugar has dissolved. Stir in the essence. Spread the mixture over the prepared base using a spatula, then refrigerate for 1 hour or until it is set.
  • Prepare topping: In a microwave-safe bowl, combine dark chocolate and butter. Microwave on medium power for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until smooth. Let it sit for 5 minutes to thicken. In another bowl, melt white chocolate in the microwave the same way. Split the white chocolate in half. Dye one portion green with food coloring. Spread the dark chocolate mix over the filling. Put the rest of the white chocolate in a zip-lock bag, cut off a corner, and drizzle chocolate in a criss-cross pattern over the dark chocolate layer. Repeat with green chocolate. Swirl a skewer through the topping for a marbled effect.
  • Chill in the fridge for 4 hours until firm. Slice into squares. Enjoy!
