Chocolate pretzels (Germany)

Festive chocolate-dipped pretzels - a holiday hit!
Ingredients:
  • 125g butter, softened
  • 75.00 gm pure icing sugar
  • 1 egg, at room temperature
  • 4.40 gm vanilla extract
  • 500.00 ml plain flour
  • 32.50 gm cocoa powder
  • 200g good-quality dark cooking chocolate, chopped
Instructions:
  • In a mixing bowl, cream together butter and icing sugar until light and fluffy using an electric mixer. Mix in egg and vanilla until fully incorporated. Sift flour and cocoa over the mixture, then stir until a dough forms. Transfer the dough onto a floured surface, knead until smooth, then shape into a 1.5cm-thick disc. Wrap in baking paper and chill in the refrigerator for 30 minutes, or until ready to roll out.
  • Preheat the oven to 180°C. Line 2 large baking trays with parchment paper. Shape the dough into 20cm-long sausage shapes using 2 teaspoons of dough per biscuit. Form them into horseshoe shapes with ends pointing towards you, then cross over the ends and rest them on top of the looped dough. Place the biscuits on the baking trays and bake for 10 to 12 minutes, rotating the trays halfway through, until they are golden and firm. Let the biscuits cool on the trays for 5 minutes before transferring them to a wire rack to cool completely.
  • Melt chocolate in a heatproof bowl set over simmering water, stirring occasionally with a metal spoon until smooth. Be careful not to let the base of the bowl touch the water.
  • Prepare two baking trays by lining them with parchment paper. Dip each pretzel into decadent chocolate, then place them on the baking trays. Allow the chocolate to beautifully set before serving.
