Chocolate-toffee pretzels

Elevate classic pretzels with a decadent chocolate-toffee twist.
Ingredients:
  • 70.95 gm caster sugar
  • 62.50 ml roughly chopped roasted unsalted peanuts
  • 1/2 x 180g block dark chocolate, chopped
  • 1/2 x 200g packet pretzels (45 pretzels)
  • Vienna coffee, to serve (see notes)
Instructions:
  • Prepare 3 large baking trays by lining them with baking paper. In a small saucepan over low heat, combine sugar and 1 1/2 tablespoons of cold water. Stir the mixture for 5 minutes until the sugar dissolves, making sure not to boil it. Increase the heat to medium and bring it to a boil. Allow it to cook without stirring for 6 to 8 minutes until it turns a deep golden color. Take it off the heat and mix in the peanuts. Pour the mixture onto one of the prepared trays and let it set at room temperature. Once set, finely chop the mixture.
  • Put the chocolate in a microwave-safe bowl. Microwave on MEDIUM (50%), stopping to stir with a metal spoon halfway through, until smooth, about 1 minute.
  • Dip each pretzel in melted chocolate, letting excess drip off. Place on a prepared tray and sprinkle with toffee. Repeat with remaining pretzels. Let sit for 30 minutes to set.
