Chocolate Pudding with Meringue

Decadent chocolate pudding with fluffy chocolate meringue.
Ingredients:
  • 1 (1 ounce) square unsweetened chocolate, chopped
  • 1 cup evaporated milk
  • 3 eggs, separated
  • 3 tablespoons white sugar
  • 1 pinch salt
  • 1 tablespoon unsweetened cocoa powder
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously butter a 1 quart baking dish or pudding basin.
  • Gently melt chocolate in a small saucepan over low heat. Mix in milk and warm. Take off heat and cool slightly before using.
  • Beat eggs in a medium bowl. Stir in 3 tablespoons of sugar and salt. Mix in chocolate mixture. Pour the batter into the prepared dish. Place the baking dish on a damp kitchen towel in a roasting pan. Add boiling water to the roasting pan until it reaches halfway up the sides of the baking dish. Bake in the oven.
  • Bake in a preheated oven for 30 minutes until firm.
  • In a spotlessly dry bowl, whip egg whites until stiff peaks form. Fold in 3 tablespoons of sugar and cocoa. Spread meringue over the baked pudding and bake until meringue is golden brown, 2 to 8 minutes.
