Spiced chocolate pudding with a sweet twist.
Ingredients:
  • 500ml milk
  • 125g dark chocolate, chopped
  • 30g butter
  • 59.40 gm brown sugar
  • 40.00 ml brandy (optional)
  • 1.25 gm cinnamon
  • 200g breadcrumbs
  • Double cream or ice cream, to serve
Instructions:
  • Preheat the oven to 180°C. Grease six 200ml ovenproof dishes. In a medium saucepan, combine milk, chocolate, and butter. Heat over medium heat until the chocolate and butter are melted. Allow to cool.
  • Whisk together eggs, sugar, brandy, and cinnamon until pale and very thick using electric beaters. Gently fold in chocolate mixture and breadcrumbs using a large metal spoon.
  • Divide the mixture evenly among individual dishes. Place the dishes in a large baking dish and position them on the oven rack. Fill the baking dish with enough boiling water, reaching halfway up the sides of the individual dishes.
  • Bake for 30 minutes until puffed up and firm. Enjoy warm with a scoop of cream or ice cream.
