Indulgent and comforting chocolate puddings perfect for cold winter nights.
Ingredients:
  • Melted butter, to grease
  • 150g (1 cup) self-raising flour
  • 100g (1/2 cup) caster sugar
  • 40.00 gm cocoa powder
  • 125ml (1/2 cup) milk
  • 50g butter, melted
  • 1 egg, lightly whisked
  • Thickened cream, to serve
  • 155g (3/4 cup, firmly packed) brown sugar
  • 375ml (1 1/2 cups) boiling water
Instructions:
  • Preheat your oven to 180°C, then generously coat a 1.5L (6-cup) ovenproof dish with melted butter.
  • In a medium bowl, mix together the flour, sugar, and cocoa powder, then create a well in the center. In a large jug, whisk together the milk, butter, and egg. Slowly pour the egg mixture into the flour mixture and stir until fully combined. Transfer the batter to the prepared dish and use a spoon to even out the surface.
  • Prepare the chocolate sauce by sifting the sugar and cocoa powder into a bowl, then sprinkling it over the pudding mixture in the dish. Carefully drizzle the boiling water over the cocoa mixture.
  • Place in the oven for 40-45 minutes, or until a golden cake-like top develops and a skewer inserted halfway into the center comes out clean. Allow it to cool for 5 minutes before enjoying with a dollop of thickened cream, if desired.
