Indulge in Chef John's decadent chocolate pudding, bursting with rich cocoa flavor and a perfect balance of sweetness in every velvety spoonful!
Ingredients:
  • 8 ounces dark chocolate chips
  • 1 pinch salt
  • 1 pinch cayenne pepper
  • 6 large eggs
  • 0.33333334326744 cup white sugar
  • 1 cup whole milk
  • 1.25 cups heavy cream
  • 0.25 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 0.25 cup heavy cream, or to taste
  • 0.125 teaspoon vanilla extract, or to taste
  • 2 tablespoons shaved dark chocolate, or to taste
Instructions:
  • Place the chocolate chips, salt, and cayenne in a heat-proof measuring cup, and keep it aside.
  • Crack one egg over a bowl, letting the egg white fall into the bowl below and transferring the yolk to a skillet. Repeat with the remaining eggs, reserving the egg whites for another use.
  • Combine sugar, milk, and cream with egg yolks. Whisk vigorously until all ingredients are perfectly blended.
  • Place skillet on the stove over medium or medium-low heat. Stir constantly with a silicone spoon until the mixture is hot, thick enough to coat the back of the spoon, and reaches at least 175 degrees F (79 degrees C), about 5 minutes. Remove from heat.
  • Place a fine sieve over the bowl of reserved chocolate. Pour the custard sauce into the chocolate and allow it to rest for 2 minutes. Whisk until the chocolate melts and the custard sauce becomes smooth and glossy, for about 2 minutes. Then, add vanilla and butter, stirring until the butter melts completely, approximately 1 minute.
  • Drizzle warm custard sauce into 6 serving glasses, swirling to coat the glass with warm chocolate. Cover with plastic wrap and refrigerate until thoroughly chilled, around 3 to 4 hours.
  • In a metal bowl, whisk together the cream and vanilla extract until thickened and smooth. Carefully spoon the creamy mixture into the glasses, gently tilting and twirling to coat the sides slightly.
  • Top with elegantly shaved chocolate before serving.
