Decadent chocolate roll filled with creamy ice cream and fresh strawberries - a visual and flavorful delight!
Ingredients:
  • 3 eggs, separated
  • 141.90 gm caster sugar
  • 112.50 gm self-raising flour
  • 25g butter, melted
  • 1 litre chocolate ice-cream
  • 250g strawberries, hulled, chopped
  • 150g dark chocolate melts
  • shaved white chocolate, to serve (see tip)
Instructions:
  • Preheat the oven to 190°C. Line a 25cm x 30cm Swiss roll pan with baking paper, making sure to cover the base and sides. In a large bowl, beat egg whites with an electric mixer until soft peaks form. Gradually add 1/2 cup of sugar, 1 tablespoon at a time, beating well after each addition until the sugar is completely dissolved. Add the egg yolks one by one, beating well after each addition until the mixture is thick and creamy.
  • Sift the flour three times to make it light and fluffy. Combine the butter and sifted flour with the egg mixture, gently folding to blend together. Transfer the batter into the prepared pan and use a spatula to smooth the top. Bake for 7 to 8 minutes until it's just firm.
  • Place a 25cm x 30cm sheet of baking paper on the workbench and sprinkle with the remaining sugar. Turn the cake onto the prepared paper, peel away the lining paper, and roll up the cake from one short side using the paper as a guide. Cover with a clean tea towel and set aside to cool.
  • Take the ice-cream out of the freezer and let it soften at room temperature for 5 minutes. Mix in strawberries. Roll out the cake and spread the ice-cream mixture on it, leaving a 1cm border. Roll up the cake to enclose the filling. Cover with plastic wrap and freeze overnight until firm.
  • In a heatproof, microwave-safe bowl, combine chocolate and cream. Microwave on high for 1 to 2 minutes, stirring every minute with a metal spoon until smooth.
  • Unwrap cake and transfer to a serving plate. Drizzle with chocolate mixture and sprinkle with white chocolate. Let it sit for 10 minutes to slightly soften. Enjoy!
