Chocolate wafers with ice-cream and strawberries

Elevate your summer ice cream with homemade chocolate wafers for a touch of pizazz!
Ingredients:
  • 80g (1/2 cup) icing sugar mixture
  • 50g (1/3 cup) plain flour
  • 20.00 gm cocoa powder
  • 50g (2 1/2 tbsp) butter, melted
  • 1 egg white, at room temperature, lightly whisked
  • 250g (1 punnet) strawberries, hulled, sliced
  • 4 scoops vanilla ice-cream
  • Extra icing sugar mixture, to dust
Instructions:
  • Preheat the oven to 170°C. Draw four 10cm-diameter circles on each of 2 pieces of non-stick baking paper. Then, place the papers on 2 large baking trays.
  • In a bowl, sift icing sugar, flour, and cocoa together. Add butter and egg white, then mix with a wooden spoon until smooth. Divide mixture among circles, spreading evenly with the back of a spoon. Bake in preheated oven for 5-6 minutes until just firm, then set aside for 10 minutes before serving.
  • On each serving plate, layer a wafer with strawberries and a scoop of ice-cream, top with another wafer, then sprinkle with icing sugar.
