Whip up decadent chocolate waffles for a delightful weekend kickoff with the waffle iron.
Ingredients:
  • 200g dark chocolate
  • 25g copha
  • 200ml thickened cream, lightly whipped
  • 300g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 10.00 gm good-quality cocoa powder
  • 60.00 gm caster sugar
  • 2 eggs, separated
  • 375ml milk
  • 90g unsalted butter, melted
  • 150g strawberries, hulled, halved
Instructions:
  • Chop 150g chocolate and combine with copha in a pan. Melt over low heat until smooth, then set aside. Finely chop the remaining 50g chocolate and mix with cream. Chill until serving.
  • Combine the flour, soda, and cocoa by sifting them into a bowl, then mix in the sugar. Add the egg yolks, milk, and butter, and whisk until the mixture is smooth. In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form. Gently fold the whipped egg whites into the batter using a metal spoon.
  • Heat up your electric waffle iron. Pour in an ample amount of batter to ensure the base is covered and follow the manufacturer's instructions for cooking. Repeat this step with the remaining batter.
  • Top the waffles with a luscious choc-chip cream, drizzle with decadent chocolate sauce, and adorn with fresh strawberries.
