Irresistibly sweet and satisfying dessert.
Ingredients:
  • 200g dark chocolate, chopped
  • 342.48 gm milk
  • 4.40 gm vanilla extract
  • 225.00 gm self-raising flour
  • 20.00 gm cocoa powder
  • 40.00 gm caster sugar
  • 252.50 gm thickened cream, whipped, 
to serve
  • Grated dark chocolate, to serve
  • 90.00 gm brown sugar
  • 40g butter
  • 2.20 gm vanilla extract
  • 126.25 gm thickened cream
Instructions:
  • Preheat your oven to 150°C/130°C fan-forced and set up a wire rack over a large baking tray inside.
  • To make Vanilla Caramel Sauce, combine brown sugar, butter, vanilla, and cream in a saucepan over medium heat. Stir occasionally for 5 minutes until the butter melts and sugar dissolves. Then, bring it to a boil, reduce heat to low, and simmer for 10 minutes until the sauce slightly thickens. Remove from heat.
  • Preheat waffle maker according to manufacturer's instructions.
  • In a large microwave-safe bowl, combine the chocolate and butter. Microwave on MEDIUM (50%) for 2 minutes, pausing to stir halfway through with a metal spoon, until fully melted and smooth. Allow it to sit for 5 minutes to cool slightly before proceeding.
  • In a large jug, whisk together the eggs, milk, and vanilla until well combined. Gradually pour this mixture into the chocolate mixture, stirring until smooth. Sift in the flour and cocoa, then add the caster sugar. Whisk until the batter is almost smooth and fully combined.
  • Pour batter into waffle maker until it's halfway full and close the lid. Cook for 1 minute 30 seconds to 2 minutes until fully cooked. Keep waffles warm in the oven on a wire rack. Repeat with the rest of the batter.
  • Top the waffles generously with whipped cream and a generous drizzle of vanilla caramel sauce. Serve with extra vanilla caramel sauce on the side and a sprinkle of grated chocolate for an indulgent touch.
