Indulgent chocolate cake with hints of cinnamon, allspice, and walnut, topped with rich chocolate frosting.
Ingredients:
  • 4 (1 ounce) squares unsweetened chocolate, chopped
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.125 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 0.25 cup shortening
  • 1.5 cups white sugar
  • 4 egg yolks
  • 1 cup milk
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare a 9x13 inch pan by greasing and flouring it. Combine flour, baking powder, salt, cinnamon, and allspice in a sifter, then set aside.
  • Melt the chocolate in a double boiler until smooth, stirring occasionally. Remove from heat and let cool to lukewarm.
  • Combine shortening and sugar in a large bowl, creaming them until light and fluffy. Add egg yolks one at a time, followed by vanilla. Alternate adding flour mixture and milk while beating. Fold in walnuts.
  • Beat egg whites in a large glass or metal mixing bowl until stiff peaks form. Gently fold 1/3 of the whites into the batter, then swiftly fold in the remaining whites until fully incorporated. Pour batter into the prepared pan.
  • Bake in the oven for 45-50 minutes until a toothpick comes out clean when inserted into the center of the cake. Let it cool.
