Chocolate-Filled Orange-Rosemary Butter Balls

Indulge in unique orange and rosemary sandwich cookies with rich chocolate and fluffy whipped cream filling.
Ingredients:
  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon grated orange peel
  • 1 tablespoon finely chopped fresh rosemary leaves
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup coarse white decorator sugar crystals, if desired
  • 1/2 cup dark chocolate chips
Instructions:
  • Preheat the oven to 400°F. In a large bowl, use an electric mixer on low speed to combine butter, powdered sugar, orange peel, rosemary, salt, and vanilla until mixed. Increase to medium speed and beat until creamy. Then add flour and baking powder on low speed until dough forms.
  • Place decorator sugar in a small bowl. Shape dough into 60 (1-inch) balls and roll them in sugar. Arrange the balls 2 inches apart on ungreased cookie sheets, and gently press them with a fork to flatten slightly.
  • Bake for 6 to 8 minutes until the edges turn golden brown. Transfer from cookie sheets to cooling racks and let them cool completely.
  • In a small microwave-safe bowl, heat chocolate chips and whipping cream uncovered in 15-second intervals on High, stirring until smooth. Refrigerate until cooled and beginning to set, for about 10 minutes.
  • Spread a generous 1/2 teaspoon of filling on the bottom of one cookie, then gently press the bottom of another cookie on top to create a delicious sandwich. Allow the cookies to sit until the filling is securely set.
