Chocolate-Peanut-Marshmallow Bars

Impress at potlucks with irresistible sweet and salty bars that perfectly blend gooey and crunchy textures.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 6 tablespoons butter or margarine, softened
  • 1 egg
  • 3 cups miniature marshmallows
  • 1 cup butterscotch chips
  • 1 cup semisweet chocolate chips
  • 6 cups Rice Chex™ cereal
  • 2 cups salted dry-roasted peanuts
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pan). In a large bowl, use an electric mixer on low speed to combine the cake mix, butter, and egg until crumbly. Press the mixture into an ungreased 15x10x1-inch pan using plastic wrap. Bake for 10 to 12 minutes or until light golden brown. Sprinkle with marshmallows and bake for an additional 3 to 5 minutes until the marshmallows puff up.
  • Place the butterscotch and chocolate chips in a large microwavable bowl and heat uncovered on Medium-High (70%) for 1 minute. Stir well. Continue microwaving for an additional 1 to 2 minutes, stirring every 30 seconds, until the mixture is smooth. Add the cereal and peanuts, and mix well.
  • Spoon the cereal mixture over the marshmallow layer while it's hot. Allow it to cool and set for about an hour. Cut into 10 rows by 6 rows to make bars. Store loosely covered.
