Indulgent chocolate-pecan muffins with rich chocolate sauce and sweet candied pecan topping - a cozy fall treat.
Ingredients:
  • 2 cups all-purpose flour
  • 1.25 cups white sugar
  • 0.5 cup butter, softened
  • 0.25 cup milk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 cup semisweet chocolate chips
  • 0.5 cup milk
  • 0.5 teaspoon vanilla extract
  • 18 candied pecans
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 18 muffin cups by greasing or lining them with paper liners.
  • In a large mixing bowl, blend flour, sugar, butter, milk, eggs, vanilla extract, baking soda, and salt until well combined using a rubber spatula. Let it sit while you move on to the next step.
  • Combine chocolate chips, milk, and vanilla extract in a microwave-safe bowl. Microwave until melted, for about 30 seconds. Stir until you have a thick, dark chocolate sauce. Incorporate into the flour mixture until fully combined and light brown in color.
  • Fill each prepared muffin cup with batter, leaving enough room at the top for the muffins to rise. Garnish the top of each muffin with a candied pecan.
  • Bake until tops bounce back when touched lightly, about 25-30 minutes in the preheated oven.
