Delicious homemade pita pizzas topped with flavorful pesto and spicy chorizo for the family to enjoy!
Ingredients:
  • 3 chorizo sausages, thickly sliced diagonally
  • 4 pita pockets or pizza bases
  • 130g pesto
  • 400g antipasto mix
  • 120g pkt Baby Rocket
Instructions:
  • Preheat a barbecue grill or chargrill on high heat. Sear the chorizo for 1-2 minutes on each side until beautifully golden brown. Place on a plate.
  • Grill the pita pockets or pizza bases for 2 minutes on each side or until lightly charred. Then, transfer them to serving plates and spread half of the pesto evenly on each pita.
  • Combine the antipasto, rocket, and chorizo in a large bowl, toss gently to mix. Divide the mixture evenly among the pizzas and spoon the remaining pesto over the top.
