Get the kids involved in the kitchen during the holidays making delicious Christmas treats for gifts or snacking!
Ingredients:
  • 250g butter, chopped
  • 250g dark chocolate, chopped
  • 3 eggs
  • 180.00 gm firmly-packed brown sugar
  • 187.50 ml plain flour, sifted
  • 37.50 gm self-raising flour, sifted
  • 250.00 ml frozen raspberries
  • 95.00 gm white chocolate bits
  • icing sugar mixture, to serve
Instructions:
  • Preheat your oven to 170°C. Lightly grease a 27cm x 17cm slice pan with a 4cm depth. Line it with baking paper, leaving a 2cm overhang on both long ends.
  • In a microwave-safe bowl, combine butter and dark chocolate. Microwave on medium-high for 2 to 3 minutes, stirring every minute with a metal spoon, until smooth and melted. Let it cool for 5 minutes before using.
  • With an electric mixer, whisk the eggs and sugar until they are light and fluffy. Mix in the chocolate mixture and beat until well combined. Gently fold in the flours.
  • Spread half of the mixture into the prepared pan. Top with raspberries and white chocolate bits. Spread the rest of the mixture over the top. Bake for 35 minutes or until gently firm to the touch. Let cool completely in the pan, then refrigerate for 4 hours until set.
  • Remove the brownie from the pan, slice into squares, sprinkle with icing sugar, and neatly pack into boxes.
