Elevate budget-friendly turkey mince burgers with a festive cranberry sauce topping.
Ingredients:
  • 500g turkey mince
  • 1 brown onion, peeled, coarsely grated
  • 70g (1 cup) fresh breadcrumbs (made from day-old bread)
  • Salt & freshly ground black pepper
  • 1 x 220g pkt fresh coleslaw
  • 40.00 ml finely chopped parsley
  • 65g (1/4 cup) good-quality whole-egg mayonnaise
  • 11.80 gm Dijon mustard
  • 8 oval white bread rolls, split
  • 85g (1/4 cup) cranberry sauce
Instructions:
  • In a bowl, mix together the turkey mince, onion, breadcrumbs, egg, salt, and pepper. Shape the mixture into 8 oval patties that are 10cm long each. Cover the patties with plastic wrap and chill in the fridge for 15 minutes.
  • Combine coleslaw mix, fresh parsley, creamy mayonnaise, and zesty mustard in a bowl. Season generously with salt and pepper.
  • Preheat a large non-stick frying pan over medium heat. Cook the patties for 3 minutes on each side until golden brown and fully cooked. Remove from heat.
  • 1. Preheat the grill on high. 2. Grill the rolls about 6cm from the heat source for 1 minute on each side or until golden brown. 3. Place half a roll on each serving plate and generously spread with cranberry sauce. 4. Top with a patty, coleslaw, and top with the remaining bread. 5. Serve immediately.
