Deliciously versatile recipe for using up Christmas baking leftovers. Customize with 3 cups total of dates, nuts, and coconut.
Ingredients:
  • 2 eggs
  • 1.25 cups white sugar
  • 1 cup coarsely chopped walnuts
  • 1 cup chopped dates
  • 1 cup flaked coconut
  • 0.25 teaspoon almond extract
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Using an electric mixer, beat eggs in a mixing bowl. Add sugar and mix thoroughly. Stir in nuts, dates, vanilla, coconut, and almond extract. Pour mixture into an ungreased 2 quart casserole dish.
  • Preheat your oven to 350 degrees F (175 degrees C). Bake the mixture for 30 minutes until hot. Remove from the oven and stir vigorously with a wooden spoon. Let it cool until manageable, then shape into small balls and coat with the remaining 1/4 cup sugar.
