Elevate your Christmas ham with a unique blend of ginger, maple syrup, and exotic Asian flavors for a festive twist!
Ingredients:
  • 125ml (1/2 cup) maple syrup
  • 110g (1/2 cup firmly packed) brown sugar
  • 500ml (2 cups) apricot nectar
  • 40.00 ml char siu sauce (Chinese barbecue sauce)(see note)
  • 10.00 gm ground ginger
  • 6 star anise, plus extra, to decorate
  • 7kg leg of ham on the bone
  • 40 cloves
  • Crusty bread, to serve
  • Mustard, to serve
Instructions:
  • Preheat your oven to 160C. In a saucepan over medium heat, combine maple syrup, sugar, apricot nectar, char siu sauce, ginger, and star anise. Bring to a simmer and cook for 10 minutes until slightly reduced. Set aside for later use.
  • Score a zig-zag pattern around the shank end of the ham using a sharp knife. Slide your fingers under the skin from the wide end, loosening it from the fat. Once you reach the shank end, gently remove the skin in one piece and set aside for storing. Score the fat in a diamond pattern at 3cm intervals using a sharp knife and stud the points of each diamond with cloves.
  • Cover an oven tray with double layers of foil. Lay the ham on top and generously brush with the glaze. Roast the ham for 1 1/2 hours, basting it with glaze every 20 minutes. Garnish with additional star anise for decoration.
  • In a small saucepan over medium heat, simmer the rest of the glaze until thickened, then brush it over the ham.
