Elevate classic rocky road with white chocolate and peppermint for a festive touch.
Ingredients:
  • 2.5 cups mini marshmallows
  • 0.75 cup chopped pecans
  • 0.25 cup crushed peppermint candies, plus more for topping
  • 0.25 cup holiday sprinkles, plus extra for topping
  • 12 ounces white chocolate, chopped
  • 3 tablespoons unsalted butter
  • 1 tablespoon light corn syrup
  • 0.25 teaspoon salt
  • 1.5 teaspoons peppermint extract
Instructions:
  • Cover the bottom and sides of an 8x8 inch pan with parchment paper, leaving some paper hanging over the edges.
  • Combine mini marshmallows, pecans, crushed peppermint candies, and sprinkles in a large bowl.
  • Combine white chocolate, butter, corn syrup, and salt in a microwave-safe bowl. Microwave at 50% power for 1 to 2 minutes, pausing to stir every 30 seconds, until the chocolate is melted.
  • Swiftly combine peppermint and vanilla extracts with the melted white chocolate. Pour the mixture over the marshmallow mixture, stirring to coat evenly. Transfer to a prepared pan, spread into a uniform layer. Sprinkle crushed peppermint candies and holiday sprinkles on top, gently pressing to stick. Chill in the fridge for about 1 hour to solidify the chocolate.
  • Remove the pan from the fridge and gently lift the tasty rocky road using the parchment edges. Cut into 25 delectable pieces and store any leftovers in an airtight container for freshness.
