Create a festive white chocolate rocky road with dried cranberries for a delectable Christmas treat.
Ingredients:
  • 2 x 180g pkts white chocolate, chopped
  • 110g pkt Slivered Almonds, toasted
  • 45g pistachio
  • 50g marshmallow
  • 65g dried cranberry
  • 20g desiccated coconut
  • 20.00 ml dried cranberries, extra
Instructions:
  • Prepare an 18cm square cake pan by greasing it and lining the base and sides with baking paper, making sure the paper overhangs by 2cm.
  • In a large microwave-safe bowl, heat the chocolate on medium power, stirring every 30 seconds with a metal spoon for 2-3 minutes, until it's completely melted and smooth.
  • In a large heatproof bowl, combine three-quarters of the almonds with the pistachios, marshmallows, cranberries, and coconut.
  • Mix three-quarters of the chocolate into the almond mixture until well coated. Spoon the mixture into the prepared pan and press with the back of a spoon to create an even surface. Tap the pan on the counter to eliminate any air bubbles. Pour the remaining chocolate over the top and smooth it out. Sprinkle the remaining almonds and extra cranberries on top. Chill in the fridge for 3 hours or until set. Cut into pieces before serving.
