Spread holiday cheer with homemade toffee candies.
Ingredients:
  • Olive oil cooking spray
  • 215.00 gm caster sugar
  • Red food colouring
  • Cachous, (blue and silver) to serve
Instructions:
  • Prepare a large baking tray by lining it with baking paper. Generously coat the cookie cutters with oil before arranging them on the tray.
  • In a small saucepan, combine sugar and 2 tablespoons of cold water. Heat gently while stirring until the sugar dissolves completely. Bring the mixture to a boil without stirring until it reaches 150°C on a candy thermometer and is a light golden color. Add red food coloring for a vibrant hue.
  • Pour the toffee into the prepared cutters to create a 5mm thickness. Let it sit for 30 seconds to cool slightly. Sprinkle with cachous and set aside for 5 to 6 minutes until cool to touch and almost set. Gently remove the cutters and allow the toffee to cool completely before serving.
