Napa cabbage stir-fry with chicken, sesame oil, peanuts, and cilantro - a tasty Asian twist on quick and healthy!
Ingredients:
  • 2 teaspoons canola oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch strips
  • 1 ounce honey-roasted peanuts
  • 2 teaspoons minced fresh ginger
  • 0.25 cup sliced green onions
  • 1 tablespoon low-sodium soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 cup fresh cilantro, chopped
  • 4 cups shredded napa cabbage
Instructions:
  • In a sizzling 10-inch skillet, heat canola oil over high heat. Add chicken and cook while stirring for 2 minutes. Mix in peanuts, garlic, and ginger. Continue cooking until chicken is no longer pink, for about 3 minutes.
  • Toss in green onions, soy sauce, rice vinegar, and sesame oil. Sauté and stir for an extra 2 minutes. Take off the heat and mix in the fresh cilantro.
  • Serve the chicken stir-fry over a bed of cabbage.
