Elevate your pecan pie with a cinnamon roll crust, topped with decadent cream cheese frosting.
Ingredients:
  • 2 cups pecan halves
  • non-stick cooking spray
  • 1 (14 ounce) can refrigerated cinnamon roll dough, separated
  • 0.75 cup dark corn syrup
  • 0.5 cup packed light brown sugar
  • 3 tablespoons butter, melted
  • 3 large eggs, at room temperature
  • 2 teaspoons ground cinnamon
  • 1 cup cream cheese frosting
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) to get it nice and toasty. Spread those pecans out on a baking sheet for a delicious roast.
  • Bake in the oven until pecans are golden and aromatic, for 5 to 10 minutes.
  • Coat a 9-inch pie pan with cooking spray and prepare a baking sheet lined with parchment paper or aluminum foil.
  • Press the cinnamon rolls into the pie pan, sealing the edges together to form a delicious crust.
  • In a bowl, vigorously combine corn syrup and brown sugar until a thick, sticky mixture forms. Introduce butter and continue whisking until smooth. Gradually blend in eggs, one at a time, ensuring each is fully incorporated before adding the next. Fold in cinnamon, vanilla extract, and salt until well mixed.
  • Sprinkle the toasted pecans over the cinnamon roll 'crust' and drizzle the brown sugar mixture on top. Transfer the pie to the lined baking sheet.
  • After preheating the oven, bake for 15 minutes until golden brown, covering the crust with aluminum foil to prevent burning.
  • Lower the oven temperature to 350 degrees F (175 degrees C) and bake the pie until set in the middle, about 20 to 25 minutes. Let the pie cool for 15 minutes before serving.
  • Microwave the cream cheese frosting until silky and pourable, for about 30 seconds. Drizzle the warm frosting over the pie and let it sit until it sets a bit, around 20 minutes.
