Put a fun spin on classic banana bread with a cinnamon donut twist.
Ingredients:
  • 300g self-raising flour
  • 110g brown sugar
  • 125ml buttermilk
  • 150g melted butter
  • 2 Free Range Eggs
  • 2 mashed large ripe bananas
  • 40.00 ml cinnamon sugar
  • 10g butter
  • 3 lady finger bananas
Instructions:
  • Divide the self-raising flour between two bowls. Mix the caster sugar into one bowl and the dark brown sugar into the other.
  • Combine the buttermilk, melted butter, eggs, and mashed bananas in a bowl. Divide the mixture between the two portions of flour and stir until well combined.
  • Alternate spoonfuls of banana bread batter and cinnamon sugar in a greased and lined 10cm x 22cm loaf pan. Swirl gently with a knife to create a marble effect, then smooth the top.
  • Melt 10g of butter in a frying pan over medium-high heat. Slice lady finger bananas in half lengthwise. Cook them cut-side down for 2 minutes until golden. Place them cut-side up on top of the banana bread.
  • Bake at 180C for 1 hour or until a skewer inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then invert onto a serving plate. Serve warm or at room temperature.
