Mexican horchata: Nutty rice drink with cinnamon and sweet milk.
Ingredients:
  • 10 cups cold water, divided
  • 2 cinnamon sticks
  • 2 cups uncooked white rice
  • 1 cup almonds
  • 1 (14 ounce) can sweetened condensed milk
  • 6 cups ice
Instructions:
  • Boil 4 cups of water until it bubbles. Infuse with cinnamon sticks and allow to steep for 10 minutes.
  • Blend rice and almonds in a blender until sandy. Mix in cinnamon water, transfer to a bowl, cover, and let sit for 6 hours.
  • Double strain mixture through a fine-mesh sieve, ensuring to keep cinnamon sticks and discard almond and rice solids. Stir in 6 cups cold water, sweetened condensed milk, and cinnamon sticks. Enjoy over ice.
