Create incredible homemade rice milk with optional vanilla for a fraction of the cost - a simple and delicious recipe straight from a top Mexican restaurant in San Francisco.
Ingredients:
  • 1 cup long grain rice, rinsed
  • 2 quarts water
  • 1 cinnamon stick, broken into pieces
  • 1 teaspoon vanilla
  • 0.5 cup white sugar
Instructions:
  • Combine rice, water, and a fragrant cinnamon stick in a large saucepan. Allow the flavors to meld together for 3 hours.
  • After 3 hours, let the mixture come to a boil, then lower the heat and let it simmer for 30 minutes. Finally, allow it to cool.
  • Blend rice mixture in a blender until velvety. Strain through cheesecloth or a fine sieve. Add vanilla and sugar to taste. Chill and pour over ice to enjoy.
