Chilled cinnamon-infused horchata made without boiling.
Ingredients:
  • 1 cup uncooked long grain white rice
  • 3.5 cups cold water
  • 1 (12 fluid ounce) can evaporated milk
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Soak the rice in a bowl overnight, ensuring it is fully covered with water.
  • Drain the rice and discard the water. Combine cold water and evaporated milk. Place drained rice in a blender with half of the milk mixture. Blend until rice is finely ground, around 30 seconds. Add sugar, cinnamon, and vanilla; blend thoroughly. Pour in the rest of the milk mixture; blend until smooth.
  • Prepare a double-layered cheesecloth in a strainer over a bowl. Strain the rice milk through, discarding solids. Repeat if needed. Serve chilled over ice.
