Indulge in a refreshing iced coffee infused with homemade Mexican horchata for a delightful drink worth savoring.
Ingredients:
  • 0.5 cup uncooked white rice
  • 1 (3 inch) cinnamon stick, broken into pieces
  • 4 cups water
  • 0.5 (14 ounce) can sweetened condensed milk
  • 1 cup milk
  • 0.5 teaspoon vanilla extract
  • 0.5 cup ice cubes, or as needed
  • 0.5 cup cold brew coffee, or as needed
  • 1 packet artificial sweetener, or to taste
Instructions:
  • Infuse rice with aromatic cinnamon sticks by soaking in water for 2 hours.
  • Save the rice water after draining. Combine the rice and cinnamon sticks in a food processor or powerful blender and process until mixture resembles coarse sand.
  • Return the rice mixture to the soaking water and allow it to rest for 2 hours, giving it a gentle stir from time to time.
  • Pour the rice mixture through a fine sieve into a container, then mix in sweetened condensed milk, milk, and vanilla extract. Stir thoroughly until fully combined, then chill the horchata in the refrigerator until it's ready to be enjoyed.
  • Place a tall glass filled with ice cubes. Pour the same quantities of cold coffee and horchata into the glass. Sweeten to your liking.
