Indulge in creamy cinnamon ice cream, a decadent treat with a warm, toasty flavor that pairs perfectly with apple pie.
Ingredients:
  • 2 teaspoons ground cinnamon
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 cups heavy cream, divided
  • 6 egg yolks
Instructions:
  • Toast the cinnamon: Add cinnamon to a dry skillet over low heat. Stir constantly until fragrant, about 1 minute. Be careful not to burn it.
  • In a medium saucepan over medium heat, gently heat the milk, sugar, salt, cinnamon, and 1 cup of cream, whisking to infuse the flavors of the cinnamon into the mixture.
  • Place a bowl filled with ice on another bowl, pour in the remaining cream, and top with a mesh strainer.
  • Whisk the egg yolks and gradually pour the warm milk mixture into them while whisking constantly to prevent curdling. Return the mixture to the saucepan.
  • Cook the mixture over medium heat while stirring constantly with a wooden spoon or heat-proof spatula. Ensure the custard thickens and coats the back of a spoon. It is ready when a swipe of your finger across the back of the spoon leaves a clean trail.
