Cinnamon Roll Muffins

Cinnamon roll-inspired muffins with sweet raisin-cinnamon batter and sugary glaze.
Ingredients:
  • 1 cup water
  • 0.5 cup raisins
  • 2 cups all-purpose flour
  • 0.75 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 cup unsalted butter, melted and cooled
  • 0.25 cup powdered sugar
  • 0.25 teaspoon vanilla extract
  • 1 teaspoon milk, or more as needed
Instructions:
  • Preheat oven to 400 degrees F (200 degrees C) and line 18 muffin cups with paper liners.
  • In a small saucepan, simmer raisins and water until they plump up. Remove from heat and let steep for 10 minutes.
  • Combine the flour, sugar, baking powder, cinnamon, and salt in a large bowl, then create a well in the center.
  • Combine melted butter with the raisin-water mixture, then add eggs and beat until well combined. Pour into the flour mixture well; gently mix using a fork until just moistened and lumpy - avoid overmixing. Spoon batter into the muffin cups and bake.
  • Bake in the preheated oven for 25 minutes until golden. Allow to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely for about 20 minutes.
  • In a bowl, mix together powdered sugar and vanilla to make the glaze. Stir in 1 teaspoon of milk at a time until you achieve your desired drizzling consistency. Add more milk if needed.
  • Gently pour the glaze over the muffins once they have cooled.
