Delicious apple cinnamon roll muffins using frozen dinner rolls for an easy, gooey treat.
Ingredients:
  • 12 frozen dinner rolls (such as Rhodes®)
  • cooking spray
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 3 tablespoons ground cinnamon
  • 0.25 cup butter, melted
  • 2 apple - peeled, cored, and chopped
  • 0.25 cup golden raisins
  • 0.5 cup cream cheese, at room temperature
  • 0.5 cup confectioners' sugar
  • 3 tablespoons heavy whipping cream, or more as needed
  • 1 teaspoon vanilla extract
Instructions:
  • On a baking sheet, arrange the frozen rolls. Coat a piece of plastic wrap with cooking spray and place it over the rolls. Allow them to rise until doubled in size, approximately 3 hours.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a muffin tin by lining it with paper liners.
  • Combine white sugar, brown sugar, and cinnamon in a bowl. Pour melted butter into a separate small bowl.
  • Take around 1 tablespoon of thawed and risen dough, shape it into a ball, then coat it in the melted butter followed by the cinnamon-sugar mixture. Repeat this process to fill each muffin liner with 3 buttered and sugared dough balls.
  • Toss apples and raisins together in a bowl. Then, generously sprinkle each muffin with the delightful apple-raisin mixture.
  • Bake until beautifully golden brown, approximately 25 minutes in the preheated oven.
  • In a bowl, whip together cream cheese, confectioners' sugar, whipping cream, and vanilla extract until smooth (3-5 minutes). Drizzle the glaze over the muffins.
