Easy apple cinnamon muffins bursting with fresh fruity flavor from grated and chopped apples.
Ingredients:
  • 1 cup grated apple
  • 1 cup peeled, chopped apple
  • 0.5 cup brown sugar
  • 1.75 cups all-purpose flour
  • 0.25 cup whole wheat flour
  • 0.25 cup unsalted butter, melted
  • 0.25 cup olive oil
  • 3 tablespoons applesauce
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin with paper liners.
  • Mix the grated and chopped apples with white and brown sugars in a small bowl, then allow to sit for 5 minutes to enhance the flavors.
  • In a separate bowl, mix together all-purpose flour, wheat flour, cinnamon, baking powder, baking soda, and salt.
  • In a large bowl, combine eggs, melted butter, olive oil, applesauce, and vanilla. Stir in the apple mixture until well combined. Add the flour mixture and mix until a thick cookie dough-like batter forms. Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven for about 19 minutes or until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
