Cinnamon Swirl Coffeecake

Start your day right with a decadent Cinnamon Swirl Coffeecake topped with a crispy crunch.
Ingredients:
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups Gold Medal™ all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher (coarse salt)
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1/3 cup packed light brown sugar
  • 4 teaspoons ground cinnamon
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 2 tablespoons packed light brown sugar
  • 2 tablespoons old-fashioned oats
  • 2 tablespoons unsalted butter, melted
Instructions:
  • Preheat your oven to 350°F and generously grease a 9x5x3-inch loaf pan on all sides and bottom. Set aside.
  • In the bowl of a stand mixer, cream together 1/2 cup of butter and granulated sugar on medium speed for 3 to 4 minutes until smooth and fluffy. Add the eggs one at a time, making sure to beat well after each addition. Finally, mix in the vanilla until well combined.
  • Combine the flour, baking powder, and salt in a medium bowl using a sifter.
  • Gradually add the flour mixture to the stand mixer on low speed, alternating with the milk, ensuring not to over mix.
  • Combine all filling ingredients in a separate small bowl, mixing well.
  • Pour half of the delicious batter into the pan. Spread the delightful filling over the batter and then crown it with the remaining half of the batter.
  • Combine topping ingredients in a separate bowl, then evenly sprinkle over the batter.
  • Bake for 50 to 60 minutes until the top is a beautiful golden brown and a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool for 10 minutes in the pan on a wire rack. Gently loosen the sides of the loaf from the pan, remove it, and place it on the wire rack. Let it cool completely for about 2 hours before slicing.
