Cinnamon-Orange Breakfast Puffs

Delicious cinnamon orange puffs, ready in 35 minutes - perfect for breakfast!
Ingredients:
  • 1 tablespoon plus 1 teaspoon sugar
  • 1/4 cup orange juice
  • 2 teaspoons vegetable oil
  • 2 tablespoons fat-free cholesterol-free egg product or 1 egg white
  • 2/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon grated orange peel
  • 3 tablespoons sugar
  • 2 teaspoons butter or margarine, melted
Instructions:
  • Preheat oven to 400°F. Generously coat a 12-cup mini muffin tin, each cup measuring 1 3/4 x 1 inch, with cooking spray.
  • In a small bowl, combine 1 tablespoon plus 1 teaspoon of sugar, orange juice, oil, almond extract, and egg product until well blended. Add flour, baking powder, 1/4 teaspoon of cinnamon, and orange peel; stir until just moistened. Fill muffin cups 3/4 full.
  • Bake for 12 to 15 minutes until golden brown. Take out of the pan and let cool for 5 minutes. Combine 3 tablespoons of sugar and the remaining 1/2 teaspoon of cinnamon in a small bowl. Brush each puff with butter and coat with the sugar-cinnamon mixture.
