"Roll up tender crepes with fragrant cinnamon orange filling and drizzle with sticky orange syrup for a delightful dessert."
Ingredients:
  • 150g plain flour
  • 20.00 gm caster sugar
  • 2 Free Range Eggs
  • 20g butter, melted
  • 310ml milk
  • Melted butter, extra, to grease
  • 185ml orange
  • 110g caster sugar
  • 150g butter, extra, chopped
  • 0.63 gm ground cinnamon
  • 2 navel oranges, extra, peeled and segmented
Instructions:
  • In a large bowl, add flour, sugar, and a pinch of salt. Create a well in the center. Combine eggs, butter, and milk in a separate jug. Slowly whisk the egg mixture into the flour mixture until smooth and well combined.
  • 1. Preheat a 20cm non-stick frying pan over medium heat and brush with melted butter. Pour 1/4 cup of batter into the pan, swirl to coat, and cook until lightly golden and set. Flip with a spatula and cook until golden, then transfer to a plate. Repeat to make 8 crepes.
  • In a saucepan over low heat, combine orange juice, orange zest, extra sugar, chopped butter, and cinnamon. Stir until the sugar dissolves. Increase heat and simmer for 10 minutes until slightly thickened. Stir in orange segments.
  • Fold the crepes in half and distribute them amongst the serving plates. Add orange segments on top and drizzle generously with orange syrup.
