Orange & cinnamon fruit sauce with toasted brioche

Ingredients:
  • 4 oranges
  • 375g pkt mixed dried fruit
  • 57.20 gm honey
  • 40 mls (2 tbsp) Grand Marnier
  • 6 2cm thick slices of brioche loaf
  • 150g mascarpone
Instructions:
  • Peel the rind from 3 oranges with a vegetable peeler, making sure to remove the white pith. Then finely cut the rind into strips or use a zester as an alternative.
  • Squeeze the juice from the oranges and set aside. In a saucepan, mix the orange rind strips, orange juice, mixed dried fruit, honey, and cinnamon stick. Heat gently until boiling, stirring frequently. Let it simmer for 3 minutes. Take the saucepan off the heat, add in the Grand Marnier, and discard the cinnamon stick.
  • Toast the brioche slices until they are golden brown, then generously spread them with the delicious mascarpone. Place the brioche on serving plates and top with the warm fruit sauce. Serve immediately for a delightful treat.
