Delicious cinnamon-raisin French toast muffins with a crispy streusel topping. Tender, moist, and packed with flavor.
Ingredients:
  • Unsalted butter as needed for greasing muffin cups
  • 2/3 cup half and half
  • 2 large eggs
  • 2 teaspoons white sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 3 cups cinnamon-raisin bread, cubed, lightly packed
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons light brown sugar
  • 1/8 teaspoon ground cinnamon
  • 2 Tablespoons cold unsalted butter
  • 1/2 cup Maple syrup, or to taste, optional
Instructions:
  • Preheat the oven to 350°F (180°C) and grease a standard 6-cup muffin tin with butter.
  • Combine half and half, eggs, sugar, vanilla, and salt in a large mixing bowl, whisk until smooth. Add bread cubes to the mixture, stirring to coat all pieces. Divide batter evenly into the muffin tin.
  • For the streusel topping, mix flour, brown sugar, and cinnamon in a bowl. Add cold butter, cut into small pieces, and combine with the flour mixture until it resembles coarse sand with small pebbles. Sprinkle the streusel evenly over the 6 muffins.
  • Bake muffins at the oven's center until golden brown, approximately 35 to 40 minutes. Let them cool on a rack for 5 minutes. Finish by drizzling with maple syrup and serving warm.
