Indulge in a zesty pumpkin pie spice cake created with Betty Crocker® Gluten Free yellow cake mix - a delightful treat!
Ingredients:
  • 1 box (15 oz) Betty Crocker™ Gluten Free Yellow Cake Mix
  • Water, butter and eggs called for on cake mix box
  • 1/4 cup mild-flavor (light) molasses
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon ground cloves
  • 1/4 cup butter, softened
  • 3 tablespoons milk
  • 2 teaspoons grated orange peel
  • 1/2 teaspoon gluten-free vanilla
  • 2 cups powdered sugar
  • 1/2 cup chopped walnuts, toasted
Instructions:
  • Preheat the oven to 350°F and lightly grease the bottom of an 8- or 9-inch square pan with shortening.
  • In a large bowl, mix all cake ingredients using an electric mixer on low for 30 seconds. Increase speed to medium and beat for 2 minutes, scraping the bowl occasionally. Pour batter into pan.
  • Bake in an 8-inch pan for 35 to 40 minutes or a 9-inch pan for 33 to 38 minutes, until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan on a cooling rack for about 1 hour.
  • In a large bowl, use an electric mixer on low speed to combine 1/4 cup of butter, milk, orange peel, and vanilla until smooth. Gradually mix in powdered sugar, 1 cup at a time, until a smooth and spreadable consistency is achieved. If the frosting is too thick, gradually mix in more milk, 1 teaspoon at a time. Frost the cake, sprinkle with walnuts, and cut into 3x3 squares.
