Tangy citrus mud cake - ideal for tea time.Pair with a steaming cup of tea.
Ingredients:
  • 4.00 tsp finely grated lemon rind
  • 4.00 tsp finely grated lime rind
  • 3 tsp finely grated orange rind
  • 350g butter, chopped
  • 180g white chocolate, chopped
  • 430.00 gm caster sugar
  • 8.80 gm vanilla extract
  • 386.25 gm milk
  • 3 eggs
  • 500.00 ml plain flour, sifted
  • 112.50 gm self-raising flour, sifted
  • orange slices, to serve
  • 360g white chocolate, chopped
  • 155.10 gm sour cream
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced. Grease a 6cm-deep, 19cm square cake pan, and line the base and sides with two layers of baking paper.
  • In a saucepan over low heat, harmonize the zests of lemon, lime, and orange with butter, chocolate, sugar, vanilla, and milk. Mix until velvety. Pour into a large bowl and let it cool for 10 minutes.
  • Crack and add eggs, then stir gently to combine. Mix in plain flour and self-raising flour until well blended. Transfer the mixture into a prepared pan. Bake for 2 hours or until a skewer inserted in the center comes out with moist crumbs. Let it rest in the pan for 10 minutes before turning out onto a wire rack to cool.
  • Prepare the ganache by placing the chocolate, lemon rind, and lime rind in a heatproof bowl. Set the bowl over a pan of simmering water and stir until melted, for about 4 to 5 minutes. Remove from heat and mix in the sour cream. Chill in the refrigerator for 30 to 40 minutes until thickened. Spread the ganache over the cake, allowing it to set for 10 minutes. Serve with orange slices.
