Citrus scallops over pasta with crusty bread and chilled white wine for a classy dinner.
Ingredients:
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 4 green onions, thinly sliced
  • 1 clove garlic, minced
  • 1 pound scallops
  • 0.5 tablespoon salt
  • 0.25 teaspoon crushed red pepper flakes
  • 0.5 teaspoon grated lime zest
  • 2 tablespoons fresh lime juice
  • 4 large oranges, peeled and segmented
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Heat oil in a large skillet over medium-high heat. Sauté red bell pepper, green onions, and garlic for 1 minute. Add scallops, salt, and red pepper flakes. Cook until scallops are opaque and red bell pepper is tender, about 4 to 6 minutes.
  • Combine lime zest and juice while scraping up any caramelized bits. Cook for a minute. Add oranges and cilantro, and heat through for about 2 minutes.
