Delicious scallops and tangy citrus, perfect over rice or pasta.
Ingredients:
  • 2.5 tablespoons olive oil
  • 1 pound bay scallops
  • 2 tablespoons all-purpose flour
  • 1 cup white wine
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped green bell pepper
  • 1.5 tablespoons chopped fresh dill
  • 4 cherry tomatoes, quartered
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
Instructions:
  • In a skillet over medium heat, warm the olive oil. Dredge the scallops in flour and cook on each side for 1 to 2 minutes until golden. Transfer the scallops, discard any excess oil, then deglaze the pan with white wine, scraping up the flavorful browned bits.
  • Combine the onion, green bell pepper, and dill in the skillet, cooking and stirring for roughly 2 minutes. Add the tomatoes, lemon juice, and lemon zest, continuing to cook for about 1 minute. Stir in the butter until melted. Keep cooking and stirring until the liquid has reduced to your liking. Finally, reintroduce the scallops to the skillet, heating them through.
