Refreshing papaya and orange-infused bean chili: a sweet and vibrant dish for any season.
Ingredients:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 cup chopped ripe papaya
  • 0.75 cup water
  • 0.75 cup chopped red onion, divided
  • 0.25 cup orange juice
  • 0.25 cup chopped green onions
  • 1 (4 ounce) can chopped green chilies
  • 2 tablespoons hot salsa
  • 2 tablespoons Cajun seasoning, or more to taste
  • 2 tablespoons Italian seasoning
  • 1 tablespoon garlic powder
  • 1 teaspoon grated orange zest, or to taste
  • 1 medium avocado, chopped
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • In a pot over medium heat, mix black beans, pinto beans, papaya, water, red onion, orange juice, green onions, green chiles, salsa, Cajun seasoning, Italian seasoning, garlic powder, and orange zest. Bring to a gentle simmer and cook for 10-15 minutes.
  • Combine the remaining 1/4 cup of red onion, avocado, and cilantro in a bowl, being careful not to mash the avocado.
  • Serve the chili in 4 bowls and generously sprinkle with the mixed topping.
