Ingredients:
  • 40g butter, chopped
  • 800g Spunta, Sebago or Coliban potatoes
  • 84.98 gm hot milk (see note)
  • Extra butter, to serve
Instructions:
  • Peel and cut potatoes into large chunks. Boil in a generously salted large saucepan for 20 minutes until tender but firm.
  • Carefully drain the potatoes and place them back in the saucepan over low heat to allow any excess water to evaporate. Gently shake the pan to ensure the potatoes are dry. Roughly mash the potatoes using a potato masher.
  • Combine butter and hot milk with the potatoes, then use a wooden spoon to beat until fluffy. Season with salt and pepper. Serve with an extra pat of butter and a sprinkle of salt and pepper on top.
