Easy Berry Dump Cake: Fresh blueberries and raspberries with a zesty lemon kick baked to perfection in minutes. Top with vanilla ice cream for a delightful summer treat.
Ingredients:
  • 3 cups fresh blueberries
  • 3 cups fresh raspberries
  • 1/2 cup sugar
  • 1/2 teaspoon ground ginger
  • 1 teaspoon grated lemon peel
  • 2 tablespoons fresh lemon juice
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 3/4 cup butter, melted
  • Vanilla ice cream, if desired
Instructions:
  • Preheat the oven to 350°F and generously coat a 13x9-inch pan with cooking spray.
  • Evenly layer the berries at the bottom of the pan. In a small bowl, combine sugar, ginger, and lemon peel; sprinkle this mixture over the berries. Lastly, drizzle lemon juice over the top.
  • Evenly sprinkle the dry cake mix on top and gently shake the pan to distribute.
  • Drizzle melted butter over the top, ensuring it coats the surface evenly. Bake for 45 to 50 minutes, or until the top is lightly golden brown, mostly dry, and bubbly around the edges. Let it cool for 15 minutes before serving, and add a scoop of ice cream on each portion.
