Delicious coconut coffee muffins, gluten-free and easy to make with coconut flour and shredded coconut.
Ingredients:
  • cooking spray
  • 0.66666668653488 cup strong brewed coffee, cooled
  • 1 tablespoon coconut oil
  • 0.5 cup coconut flour
  • 0.5 cup brown sugar
  • 0.25 cup shredded unsweetened coconut
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously coat 6 muffin cups with cooking spray.
  • In a bowl, vigorously whisk together coffee, eggs, and coconut oil. In a separate bowl, mix coconut flour, brown sugar, and shredded coconut. Gently fold the coffee mixture into the flour mixture until just combined, then spoon into muffin cups.
  • Bake in the preheated oven for about 20 minutes or until a toothpick inserted in the center comes out clean.
