Quick and delicious cod chowder with potatoes, bacon, corn, and flaky fish ready in 1 hour.
Ingredients:
  • 8 slices bacon, diced
  • 1 large onion, diced
  • 1 red bell pepper, seeded and diced
  • salt and ground black pepper to taste
  • 2 cloves garlic, chopped
  • 1.5 tablespoons seafood seasoning (such as Old Bay®)
  • 1 (16 ounce) can chicken broth
  • 3 red potatoes, cut into 1/2-inch cubes
  • 4 ears sweet corn, shucked and kernels cut off
  • 0.5 cup water, or as needed to cover
  • 2 cups whole milk, or more as needed
  • 2 tablespoons butter
  • 1 pound thick cod fillets, cut into 1-inch pieces
  • 2 tablespoons chopped fresh flat-leaf parsley
Instructions:
  • Crisp and brown the bacon in a soup pot over medium heat for about 10 minutes. Remove the bacon using a slotted spoon, but keep the drippings in the pot.
  • Saute onion and red bell pepper until tender, around 5 minutes, then season with salt and pepper. Add garlic and seafood seasoning, cook and stir for another 2 minutes.
  • Add chicken broth to the pot and gently mix in the potatoes and corn; add more water if necessary to fully cover the vegetables. Bring the mixture to a boil, then lower the heat and let it simmer until the potatoes are soft, approximately 15 minutes.
  • Combine milk and butter, stirring until the butter melts. Add reserved bacon to the mixture. Heat until almost boiling, then gently stir in cod and parsley. Cook for 5 to 8 minutes or until the fish flakes easily, stirring occasionally.
